Chocolate and orange cream with crunchy almond

Orange ................................2

Chopped dark chocolate .......140 g

Crème fraîche .....................240g

Whole milk ........................240 g

Egg yolk ....................6

Sugar ................................50g

Salt ........................................2g

Extra virgin olive oil ..15 g

Almond crocanti ..........50 g


Preparation

Put the chopped chocolate in a deep bowl and add the zest of one of the oranges. We booked. Heat the crème fraîche and the milk in a saucepan, without letting it come to a boil. Mix the yolks with the sugar and add them to the saucepan with the previous mixture. We remove to integrate. Cook over medium heat until thickened, without letting it exceed 80º C (so that the yolks do not cut). Pour the cream over the chocolate and stir to melt. When we obtain a homogeneous mixture, add a pinch of salt and the extra virgin olive oil. Stir again until incorporated. Divide the cream into six small glasses and let it temper. Then we put them in the fridge and wait for them to take shape for a few hours (better overnight). When serving, sprinkle each one with crunchy almonds and decorate with strips of orange peel.
